Carol Nancy (Jeckell) Arkell, 76, of Lamberton passed away on Monday, November 27th at her home.
Carol was born February 1, 1941 at the Springfield Hospital to Albert and Virginia (Iverson) Jeckell. Carol grew up on the family farm southeast of Lamberton. She was baptized and confirmed at Sharon Lutheran Church in Lamberton. She graduated from Lamberton High School in 1959 and Augsburg College in 1963 with a Bachelor of Science degree in Home Economics Education and a minor in Biology. Carol taught home economics in Williams, MN, Slayton, MN, and was a substitute teacher in Lamberton, MN. Carol was united in marriage to Raymond Joseph Arkell, Jr. on June 7, 1969 at Our Savior’s Lutheran Church of Lamberton. The couple farmed south of Lamberton and were blessed with 5 children. They later moved to town. Carol worked at Valley View Manor as a cook and dietary aid for 27 years until her retirement in February of 2009. She was active in the American Legion Auxiliary and Our Savior’s Women’s group. She loved flowers, gardening, canning, baking, cooking, cousin’s day, being a farmer’s wife, and being a Grandma to her five grandchildren. Something she enjoyed immensely was hosting family gatherings. A proud moment for Carol was when she was awarded the Betty Crocker award in her senior year of high school. She lived courageously with ALS for the last 9 years.
